The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.
1 ball of prepared pizza dough (I used Trader Joe’s brand)
1 log fresh mozzarella cheese, sliced into rounds
2-3 ripe fresh roma tomatoes, sliced
handful of fresh basil leaves
2 tablespoons extra virgin olive oil
1-3 cloves of garlic, minced
On a medium high heat grill, oil the grates well with olive oil.
Take your pizza dough and stretch out into a freeform shape to form a crust.
Carefully place on oiled grill grates and grill with closed lid for about 4-6 minutes.
When the bottom of the crust is browned and baked up, remove from grill and place grilled side up.
Top grilled size of crust with a drizzle of the 2 tablespoons of extra virgin olive oil.
Sprinkle minced garlic over olive oil.
Arrange mozzarella slices all over the pizza, along with the tomato slices.
Sprinkle the top with dried oregano.
Top the pizza with fresh basil leaves.
Return pizza to the grill and grill with closed lid until bottom is browned and cheese is melted.
