Pineapple Cheesecake

Deliciously sweet and creamy, this pineapple-topped cheesecake is sure to be a hit.

1 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup butter
24 ounces cream cheese
1 cup sugar
4 eggs
1 tablespoon vanilla
1/4 teaspoon salt
1/4 cup pineapple juice
1/2 cup sugar
3 tablespoons cornstarch
1 egg
1 tablespoon butter
8 3/4 ounces crushed pineapple


1. Preheat oven to 350°F (175°C).
2. For the crust, mix together the graham cracker crumbs, 2 tablespoons of sugar, and 1/4 cup of butter in a bowl until combined.
3. Press the mixture into the bottom of a 9-inch springform pan.
4. For the filling, beat together cream cheese and 1 cup of sugar in a large bowl until fluffy.
5. One at a time, beat eggs into the mixture until combined.Then stir in 1 tablespoon of vanilla and 1/4 teaspoon of salt.
6. Pour the mixture into the pan on top of the crust.
7. Bake at 350°F (175°C) for 50 minutes.
8. Allow it to cool to room temperature before transferring to the refrigerator and chilling for several hours.
9. For the glaze, reserve the juice from the pineapple and mix it with enough water to make 1/2 cup.
10. In a medium saucepan, mix together 1/2 cup of sugar and 3 tablespoons of cornstarch with the juice and cook over low heat until thick.
11. Beat 1 egg into the saucepan and stir in 1 tablespoon of butter.
12. Allow the mixture to cool and spread on top of the cheesecake.
13. Drain and set aside 8 3/4 ounces of crushed pineapple and spread it over top of the glaze.
14. Refrigerate cheesecake for an hour before serving.


For extra flavor, add 1/2 teaspoon of lemon juice to the glaze.
