Garlic and Herb Three Cheese Pizza

This garlic and herb three cheese pizza is an easy-to-make delicious meal. The combination of garlic, parsley, ricotta, herb cheese, lemon zest, provolone and thyme make it a truly flavorful pizza.

1 lb pizza dough
3 tablespoons garlic, minced
3 tablespoons fresh parsley, minced
1/4 cup ricotta cheese
1/4 cup herb cheese, such as goat cheese
Juice and zest of 1 lemon
1 cup Provolone cheese, shredded
1 teaspoon fresh thyme, minced
Olive oil, for brushing
cornmeal, for dusting


Preheat oven to 425°F.
Stretch dough out on a lightly floured surface or a pizza peel that has been dusted with cornmeal, then form a thin round.
Mix together garlic, parsley, ricotta, herb cheese, and lemon zest.
Spread the mixture across the pizza dough to the edges then top with an even layer of provolone cheese.
Scatter thyme over the cheese mixture.
Brush the top of the pizza lightly with olive oil.
Bake until crisp and bubbly-brown on top (about 18-20 minutes).


If the dough is sticking to your hands, use a little flour or cornmeal to help prevent sticking.
Feel free to substitute the ricotta and herb cheese with other types, including Gorgonzola, feta, or blue cheese.
