Chickpea Salad with Cilantro Lime dressing

A light, healthy, and flavorful chickpea salad with a zesty lime and cilantro dressing.

Ingredients

2 (15 oz or 425 grams) chickpeas, washed and drained
1 medium red onion, diced
1 medium ripe tomato, chopped
Juice of 2 limes
4 tablespoons finely chopped cilantro
1 tablespoon tamarind paste
Salt to taste
1/2 teaspoon cayenne pepper

Instructions

In a large bowl, add the chickpeas, red onion, and tomato.
In a separate small bowl, whisk together the lime juice, cilantro, tamarind paste, salt, and cayenne pepper until combined.
Pour the dressing over the chickpea mixture and gently mix until all ingredients are well combined.
Refrigerate for at least 30 minutes before serving.
Garnish with additional cilantro and serve chilled or at room temperature.

Notes

For an extra kick, add more cayenne pepper according to your preference.
Feel free to add additional vegetables, such as bell peppers or cucumbers, for added flavor and texture.
