Candied Ginger Biscotti

Delicious delicacies with a crunchy outside and a sweet and spiced inside. Candied ginger biscotti are the perfect tea-time treat!

3 large eggs
1 1/2 teaspoon pure vanilla extract
2 cups all-purpose flour
3/4 cup granulated white sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/3 cup chopped candied ginger


In a small bowl, lightly beat together eggs and vanilla extract. Set aside.
In a bowl of a stand mixer or a large bowl using a hand mixer, combine flour, sugar, baking powder, and salt. Beat until combined (about 30 seconds).
Slowly add egg mixture and beat until a dough forms. Halfway through adding the eggs, add candied ginger.
With floured hands, divide the dough into two parts.
On a lightly floured surface, roll the dough into two logs, each about 10 inches long and 3 inches wide.
Transfer the logs onto a baking sheet lined with parchment paper and bake for 35 to 40 minutes until firm to the touch. The logs will spread during baking.
Remove the baking sheet from the oven and let cool on a wire rack for 10 minutes.
Transfer the logs to a cutting board and using a serrated knife, slice the logs into ½ inch thick pieces on the diagonal.
Arrange the pieces evenly onto the baking sheet. Bake for 10 minutes, then turn the slices over and bake for another 10 minutes.
When the biscotti are firm to the touch, remove the baking sheet from the oven and let cool. Store the candied ginger biscotti in an airtight container.


For extra flavor, try adding ½ teaspoon of ground cinnamon or ground ginger.
Feel free to use whichever type of candied ginger you like. Dark candied ginger gives a stronger flavor than golden candied ginger.
