Chinese Almond Cookies

These Chinese Almond Cookies have a unique blend of sugar and almond extract that will tantalize your taste buds. Paired with the crunchy texture of almonds, these cookies will satisfy your cravings.

Ingredients

1/2 cup whole natural almonds
1 cup sifted all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter/margarine
1/3 cup sugar
1/2 teaspoon almond extract
1 tablespoon of gin, vodka, or water

Instructions

1. Reserve 36 whole almonds and finely chop/grind the remainder of almonds.
2. Sift flour with baking powder and salt.
3. Thoroughly cream butter with sugar and add in all the remaining ingredients excluding the 36 whole almonds.
4. Form dough into 36 balls then place on a greased cookie sheet.
5. Press the almonds into the center of each ball.
6. Bake at 350 degrees for 20 minutes or until the cookies are lightly browned.

Notes

This recipe may yield between 30-36 cookies depending on the size of the balls.
