Kare Kare: Oxtail & Peanut Stew

24 lbs beef oxtail
23 cloves minced garlic
1/2 large onion, sliced
1 jar crunchy peanut butter
1 can banana blossoms, drained
2 Japanese eggplants (talong), cut into 2-3 inch lengths and quartered
1 bunch Chinese long bean (sitaw), trimmed and cut into 2-3 inch lengths
Salt and pepper to taste
Shrimp paste (bagoong alamang), for serving


Place beef oxtail in a Dutch oven or large pot and cover with water. Boil on medium-high heat for 3 hours, adding water as necessary to keep the meat submerged.
After boiling for 3 hours, drain and rinse the oxtail. Return it to a clean Dutch oven or large pot, and cover with fresh water.
Add minced garlic and sliced onion to the pot with oxtail. Boil until onions are tender, approximately 5-10 minutes.
Prepare the vegetables by cutting the eggplants into 2-3 inch lengths and quartering them. Trim the ends of the long beans and cut them into 2-3 inch lengths as well.
Once onions are softened, stir in the jar of crunchy peanut butter into the pot until dissolved and fully incorporated with the water.
Place the long beans on top of the meat in the pot, followed by the eggplant. Cover the pot without stirring to let the steam cook the vegetables.
Serve the Kare Kare on a platter with steamed rice. Offer shrimp paste on the side for added saltiness and authentic flavor.


For extra tenderness, oxtail can be cooked overnight in a slow cooker on low heat.
Adjust the amount of peanut butter to taste. More peanut butter will result in a thicker, richer sauce.
