Nakji Bokum (Hot Octopus Salad)

A spicy and savory Korean dish featuring tender baby octopus mixed with a flavorful sauce and crisp vegetables.

1 lb baby octopus, cleaned
1/2 onion, sliced into o-rings
2 chilies or jalapeños, sliced on the bias
2 green onions, sliced on the bias
1/4 carrot, sliced thinly
1 red or green pepper, sliced into long strips
4 shiitake mushrooms, quartered (optional)
2 1/2 tbsp kochujang (chili paste)
2 tbsp chili powder
1 tbsp soy sauce
2 tbsp sesame oil
1 tbsp sesame seeds
2 tbsp minced garlic


Rinse the baby octopus thoroughly in cold water and cut the legs into 2”-3″ lengths.
Open the head of the octopus and remove the insides, then cut the head into quarters, making sure to drain any excess liquid.
Slice the onion, chilies or jalapeños, green onions, carrot, and pepper as specified in the ingredients list.
Combine the kochujang, chili powder, soy sauce, sesame oil, sesame seeds, and minced garlic in a bowl to create the spicy sauce.
Add the prepared vegetables and the quartered shiitake mushrooms to the sauce, if using them.
Toss the cleaned and cut octopus in the sauce until each piece is well-coated.
Allow the octopus to marinate in the sauce for 10 minutes to absorb the flavors.
Preheat a pan over medium-high heat without adding any oil.
Place the marinated octopus along with the sauce into the pan and spread it out evenly.
Cook the octopus for 8-10 minutes, stirring occasionally to prevent sticking and to ensure even cooking.
The dish is ready when the octopus is fully cooked and tender and the vegetables are cooked yet still crisp.
Serve the hot octopus salad immediately, garnished with additional sliced green onions and a sprinkle of sesame seeds if desired.
