2 medium-sized round vine ripened tomatoes, diced
1/2 lb fresh mozzarella, cut into dice
A handful of fresh basil leaves, chiffonaded
Salt and freshly ground black pepper to taste
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
Additional basil leaves for garnish


Preheat the oven and bake the puff pastry tarts as directed on the package.
Remove the tarts from the oven and let them cool slightly.
Season the diced tomatoes with salt and pepper to taste.
In a mixing bowl, combine the seasoned tomatoes, diced mozzarella, and chiffonaded basil leaves.
Add additional salt and black pepper to the mixture according to your preference.
