1 cup olive oil

Instructions

Create the marinade by whisking together olive oil, fresh lemon juice, finely chopped garlic, and freshly chopped rosemary leaves in a large baking dish.
Place the butterflied chickens in the dish and turn to coat thoroughly with the marinade.
Cover the dish and allow the chickens to marinate in the refrigerator for at least 1 hour, up to 4 hours for deeper flavor.
Preheat your grill to medium heat in preparation for cooking.
Remove the chickens from the marinade, blotting off any excess oil with paper towels.
Generously season both sides of the chickens with salt and freshly ground black pepper.
Place the marinated chickens on the grill, skin-side down, and cook without bricks for 8 to 10 minutes.

Notes

It is traditionally recommended to use bricks wrapped in foil to press the chicken down on the grill, but this recipe is adapted to cook beautifully even without the bricks.
