It’s finally summertime in Chicago… which means a sun shining bright, warm temps and the city buzzing around with many outdoor events to enjoy! Tonight, we had another couple over for dinner and I wanted to capture some summer flavors into the menu. Drawing from tropical flavors, here’s the summer dinner menu I prepared along with links to the recipes!
Rose Sangria with Guava & Pineapple

Appetizer:
Mandarin Orange & Bell Pepper Marmalade
with Cream Cheese & Crackers
Salad:
Strawberry, Avocado & Mandarin Orange Mixed Green Salad
Main Entree:
Ginger & Mango Chicken Kabobs
Ginger & Mango Beef Kabobs
served with Steamed Jasmine Rice
That cocktail would turn any summer day into a vacation day, love it!
The marmalade sounds intriguing, rushing over to the recipe 🙂
This is a a perfect summer menu. Everything looks so light, refreshing and delicious.
that entire menu sounds fabulous and perfect for a summer day!
looks delicious – yum!
That Rose Sangria is gorgeous! I am not a big fan of Rose wines though – do you think you could make it with Champagne? Or even white wine? I wonder…I probably wouldn't get the same color effect though huh?
I wish I could have been your dinner guest, it all looks great!
Fantastic meal, Joelen! Do you have any leftovers? That sangria is beautiful and I can't wait to make it.
wow… everything about this menu looks perfect for summer!!!
What a lovely meal! I really would love a glass of that sangria right about now!
