Vichyssoise (Cold Potato & Leek Soup)

A classic French soup traditionally served cold, this Vichyssoise recipe makes a refreshing and elegant appetizer that can also be enjoyed as a light meal.

2 leeks, chopped
1 onion, chopped
2 tablespoons unsalted butter
3/4 cup thinly sliced potatoes
2 1/3 cups chicken stock
Salt to taste
Ground black pepper to taste
1 1/8 cups heavy whipping cream


Melt the unsalted butter in a large saucepan over medium-low heat.
Add the chopped leeks and onion to the butter, and gently sweat for about 8 minutes, ensuring they do not take on any color.
Stir in the thinly sliced potatoes to the leeks and onions, mixing well to coat in the buttery mixture.
Pour in the chicken stock and season with salt and ground black pepper, adjusting to your preference.
Bring the soup to a simmer, then reduce the heat and allow it to simmer gently for 30 minutes, or until the potatoes are tender.
Once the vegetables are cooked, remove from heat and let the soup slightly cool.
Using a blender or food processor, puree the soup in batches until very smooth, then transfer it back into the saucepan.
Allow the blended soup mixture to cool down completely at room temperature.
When the soup is cool, whisk in the heavy whipping cream until fully incorporated.
Cover and refrigerate the Vichyssoise until thoroughly chilled.
Serve the cold Vichyssoise in small bowls or shot glasses as an appetizer for your French Cocktail Hour.


For an even creamier texture, pass the pureed soup through a fine mesh sieve.
Garnish with chopped chives or a sprinkle of paprika for added color and flavor before serving.
If you prefer a vegetarian version, substitute chicken stock with vegetable stock.
