Chicken Afritada

Chicken Afritada is a delightful Filipino dish that features chicken stewed in a slightly sweet tomato sauce, made vibrant by the addition of colorful bell peppers.


Units Scale

23 tablespoons cooking oil
1 large head garlic, peeled and minced
1 large onion, chopped
1 whole chicken, cut into serving pieces with bones intact
1 cup ketchup
1/4 cup soy sauce
12 dried bay leaves
Salt and pepper to taste
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
Optional: potatoes and carrots, chopped into bite-sized pieces


Heat the cooking oil in a wok over medium-high heat.
Add the minced garlic and chopped onion to the hot oil, sautéing until softened.
Introduce the chicken pieces to the wok.
Stir in ketchup, soy sauce, bay leaves, salt, and pepper, coating the chicken evenly.
Cook the chicken thoroughly, stirring occasionally.
Once the chicken is fully cooked, mix in the chopped red and green bell peppers.
Cook the bell peppers until they are slightly softened.
If including optional potatoes and carrots, add them along with the chicken so they can soften as the stew cooks.
Remove the bay leaves before serving.
Serve the Chicken Afritada hot with rice for a comforting meal.


For a heartier meal, add potatoes and carrots with the chicken.
Adjust salt, pepper, and soy sauce to taste for a richer or more savory flavor.
