Greek Chopped Salad

This vibrant Greek Chopped Salad is packed with colorful peppers, cucumbers, onion, and feta, all tossed in a homemade dressing for a refreshing and hearty side dish.

Ingredients

1 tablespoon red wine vinegar
1 teaspoon dried oregano
1 garlic clove, crushed
1/4 cup extra-virgin olive oil
1 medium green bell pepper, cored, seeded, and diced
1 medium orange bell pepper, cored, seeded, and diced
1 medium yellow bell pepper, cored, seeded, and diced
1 medium red bell pepper, cored, seeded, and diced
2 Kirby cucumbers, seeded and diced
1 medium red onion, diced
1/2 cup crumbled feta cheese
1/3 cup coarsely chopped pitted kalamata olives
Salt to taste
Freshly ground black pepper to taste

Instructions

Whisk together red wine vinegar, dried oregano, and crushed garlic in a small bowl.
Gradually pour in the extra-virgin olive oil into the vinegar mixture while continuously whisking to create an emulsion.
In a large mixing bowl, combine the diced green, orange, yellow, and red bell peppers.
Add the diced Kirby cucumbers and red onion to the mixing bowl with the bell peppers.
Sprinkle the crumbled feta cheese and coarsely chopped kalamata olives over the chopped vegetables.
Pour the prepared dressing over the salad mixture and toss until all the ingredients are well coated.
Season the salad with salt and freshly ground black pepper to taste.
Cover the bowl with a lid or plastic wrap and refrigerate the salad to chill for approximately 1 hour.
Remove the salad from the refrigerator, give it a final toss, and serve chilled.

Notes

For added flavor, let the salad marinate in the refrigerator for a couple of hours before serving.
You can enhance the salad by adding chopped fresh herbs such as parsley or mint.
