This is a great, refreshing way to serve up watermelon on hot summer days. The flavor of lime and mint really brightens up the watermelon and it’s a great way to add some extra flavor! My friend Jenny brought this to our Australian Wine & Dine event since it highlights Curtis Stone, an Australian celebrity chef.

1/3 cup sugar
1 lime (zested and juiced)
1/4 cup thinly sliced fresh mint leaves
1/2 large watermelon, cut into chunks
Stir the sugar, 2 tbsp water, lime zest, and 1 1/2 tbsp lime juice together in a small heavy saucepan over high heat until the sugar dissolves and the syrup comes to a boil. Let cool completely, and then refrigerate until cold.
Strain the chilled syrup into a small bowl and stir in the mint. Allow to infuse for at least 5 minutes.
Pour cold syrup over watermelon chunks and serve.
