Old Bay Fish Tacos

Delicious fish tacos seasoned with Old Bay, topped with pico de gallo and cumin chile guacamole for a flavorful twist.

Ingredients

2 large cod fillets
1 tablespoon Old Bay Seasoning
12 tablespoons olive oil for frying
68 corn tortillas
1/2 cup quesadilla cheese
12 ripe, medium tomatoes, seeded & diced
24 tablespoons finely chopped fresh cilantro
1/2 medium white onion, diced
Juice of 1 lime for pico de gallo
Salt and pepper to taste for pico de gallo
2 ripe, medium avocados, pitted
Juice of 1 lime for guacamole
1 teaspoon ground cumin
2 tablespoons salsa verde (green chile salsa)
Salt and pepper to taste for guacamole

Instructions

Place a skillet over medium-high heat and add the olive oil.
Heat until the oil is shimmering.
Season both sides of the cod fillets with Old Bay Seasoning.
Place the seasoned fillets in the skillet and brown on both sides until cooked through.
Heat the tortillas as desired, using two tortillas for each taco to create a sturdy base.
Once the fish is cooked, remove it from the pan and cut it into pieces to fit inside the tortillas.
Portion out the fish among the tortillas.
Top the fish with pico de gallo and cumin chile guacamole as desired.
For the pico de gallo, combine the diced tomatoes, chopped cilantro, diced onion, and lime juice in a bowl.
Season the pico de gallo with salt and pepper to taste, and mix well.
For the cumin chile guacamole, scoop the avocados into a bowl.
Add lime juice, ground cumin, and salsa verde to the avocados.
Mash the avocados and mix all ingredients until well incorporated.
Season with salt and pepper to taste and mix again.

Notes

You can use other white fish fillets instead of cod if preferred.
For best flavor, let the pico de gallo and guacamole sit for a few minutes before serving to allow flavors to meld.
