Lemon & Oregano Chicken Kabobs

Bright and herbaceous Lemon & Oregano Chicken Kabobs are the perfect way to enjoy the tail end of summer. Marinated in a tangy mixture and grilled to perfection, these kabobs are simple yet bursting with flavor.

1/2 cup fresh lemon juice
1/4 cup dry white wine
2 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons chopped fresh oregano
Grated zest of 1/2 lemon
Salt and freshly ground pepper, to taste
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch cubes

Instructions

In a large mixing bowl, whisk together the fresh lemon juice, dry white wine, olive oil, minced garlic, chopped fresh oregano, grated lemon zest, salt, and pepper to create the marinade.
Add the cubed chicken breasts to the bowl, ensuring each piece is coated with the marinade. Cover the bowl and place it in the refrigerator for at least 1 hour to marinate, allowing the flavors to permeate the chicken.
Prepare your grill for indirect-heat cooking, creating a hot zone for direct grilling and a cooler zone for indirect grilling. This can be accomplished by only heating one side of a gas grill or piling coals on one side of a charcoal grill.
Soak 8 wooden skewers in water for at least 15 minutes to prevent burning during the grilling process.
Once marinating is complete, remove the chicken from the refrigerator and drain the skewers. Thread the chicken cubes onto the soaked skewers.
Place the chicken skewers on the grill’s hot zone, directly over the fire. Grill the skewers, turning them one or two times, until the chicken develops a golden-brown color, about 5 minutes in total.
After browning the chicken, move the skewers to the cooler zone of the grill, away from the direct heat. Cover the grill, open the vents halfway to regulate airflow, and continue to cook the chicken. Rotate the skewers occasionally. Grill until the chicken is fully cooked, which is indicated by opaque meat throughout and clear juices, taking approximately 10 to 15 minutes more.
Remove the chicken kabobs from the grill and transfer them to a warmed platter. Accompany the kabobs with lemon wedges for squeezing, and serve while hot.
