Maple Rosemary Glazed Pork

1/3 cup pure maple syrup (grade B preferred)
1 teaspoon dried rosemary (or 2 teaspoons of fresh rosemary)
4 thick slices of pork chops or pork loin
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 teaspoons vegetable oil


Preheat the oven to 325 degrees Fahrenheit.
Season both sides of the pork chops or pork loin slices with salt and pepper.
Heat a heavy-bottom skillet with vegetable oil over medium-high heat until it just begins to smoke.
Add the pork to the skillet and sear both sides until well browned, about 3 minutes per side.
Once browned, transfer the pork to a baking sheet.
Drain off the excess fat from the skillet.
Add the maple syrup and rosemary to the skillet and cook until fragrant, roughly 30 seconds to 1 minute.
Coat the seared pork in the skillet with the maple syrup glaze.
Arrange the glazed pork back onto the baking sheet.
Bake in the preheated oven for 15-20 minutes or until the internal temperature of the pork reaches approximately 135-140 degrees Fahrenheit.
Allow the pork to rest for a few minutes before serving.


If using fresh rosemary, chop finely before adding to the glaze.
The glaze can be made with honey or agave syrup if maple syrup is not available.
Resting time is important for a juicy and flavorful result.
