Last weekend, we went out to lunch with friends at Olive Garden. I really wanted to order one of their appetizers for my meal but settled for something else. So with that appetizer still in mind, I set out to recreate it at home. Olive Garden describes their Grilled Chicken Flatbread as “Grilled chicken, mozzarella cheese, roasted red peppers and basil on flatbread crust with alfredo sauce and garlic spread.” Using their description I came up with my version which was a delicious combination of flavors. A pizza crust is topped with a garlic & parsley butter before baking just for a few minutes. Once parbaked, the pizza is finished off by topping with alfredo sauce (in place of the traditional red sauce), chicken, roasted red peppers and fresh spinach. Mozzarella cheese is sprinkled all on top and baked until done. Yummm…
recipe inspired by Olive Garden
1-2 cloves minced garlic
small handful of fresh flat leaf parsley, minced
4 tablespoons unsalted butter, melted
salt to taste
1 lb pizza dough – store bought or homemade
1/2 cup alfredo sauce – store bought or homemade
small handful baby spinach, thinly cut into ribbons
1/4 cup roasted red peppers, chopped
1-2 cooked chicken breast, chopped
1/2 cup shredded mozzarella cheese
Preheat oven to 400 degrees.
Prepare the pizza dough as directed and roll out into a free form shape, be it round, oblong, rectangular, etc.
Combine the melted butter with the minced garlic and parsley. Add salt to taste. Drizzle or spread the mixture with a pastry brush (or back of a spoon) over the tops of the crusts. Bake in the oven for 5 minutes and remove from oven.
Top the crusts with alfredo sauce, enough to lightly cover. Sprinkle the chicken, red peppers, and spinach over the crusts. Finish off with a sprinkling of mozzarella. Return to the oven and bake for 10-12 minutes until cheese is melted or to your desired doneness.

It sure looks better than anything at OG. I recently re created their Zuppa Toscana which is the only thing I'll eat there other than salad.
