Cuban Picadillo Rice

A hearty and flavorful one-dish meal that incorporates the rich tastes of Cuban cuisine. Ground beef seasoned with oregano and cumin, combined with vegetables, olives and rice.

1 pound ground beef
1 teaspoon oregano
1 teaspoon cumin
1 medium red onion, chopped fine
1 medium white onion, chopped fine
4 cloves garlic
1 small red or green pepper, chopped
1/4 cup diced baby carrots
1/2 cup beef stock
3/4 cup tomato sauce
2 small potatoes, peeled and diced
8 to 10 green olives, pitted
Salt and pepper to taste
Olive oil for sautéing
2 cups cooked rice, cold (preferably day-old rice)


In a mixing bowl, combine the ground beef with oregano, cumin, salt, and pepper.
Heat 2 tablespoons of olive oil in a large non-stick pan.
Add the chopped onions, garlic, green pepper, and carrots to the pan.
Sauté the vegetables until they are soft.
Introduce the seasoned ground beef to the pan.
Cook the ground beef until it browns.
Pour in the beef stock and tomato sauce into the pan.
Cover the pan and let everything simmer on medium-low heat for 15 minutes.
Add the diced potatoes and cover the pan again.
Continue cooking for another 15 minutes or until the potatoes are tender.
Remove the cover, place the olives into the pan.
Continue to cook uncovered for another 15 minutes or until the liquid has evaporated but the meat is still moist.
Add an additional 2 tablespoons of olive oil to the pan.
Wait until the picadillo begins to sizzle.
Incorporate the cooked rice by crumbling it into the pan.
Toss everything to mix well.
Sauté the mixture until the rice is warmed through, roughly 6-10 minutes.
Continue cooking until the rice starts to toast slightly.
Once fully warmed and slightly toasted, remove from heat.Transfer the Picadillo Rice to a serving dish and, if desired, garnish with chopped parsley before serving.


Use day-old rice for better texture as it doesn’t clump together when sautéed.
Adjust salt and pepper to taste and add additional spices if you prefer a spicier dish.
