It wasn’t too long ago when I made granola using some pantry staples. Ever since, I haven’t even thought about buying granola from the store. But the other day while I was at the store, I took a peek down the cereal aisle where the granola was. I didn’t plan on buying any but rather got some inspiration so I could make more granola at home. There’s so many flavors out that coming up with one to make wasn’t even an issue. Taking some inspiration from flavors at the store and from a fellow blog, I came up with these Chocolate Peanut Butter Granola Bites. These make a great snack and doubles up as a fun twist on the usual breakfast cereal!
I love granola as a snack and aside from the usual nut and honey version, I wanted to use up some peanut butter I had lurking in my pantry. Peanut butter makes for a great binder for granola so I incorporated it along with chocolate. Rather than baking it in mini muffin pans as seen on the How Sweet It Is blog, I opted to just form bite sized pieces of the granola before baking. It’s a bit of a rustic look and the little crumbles are just as good too!
recipe inspired by How Sweet It Is
2 cups dry rolled oats
1/4 teaspoon salt
1/2 cup chopped walnuts
1/2 cup chopped peanuts
1 tablespoon cocoa powder
1/2 cup bittersweet or semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup honey
1 teaspoon brown sugar
Preheat oven to 325.
Combine all the ingredients in a large bowl. Using your hands, roll into bite sized pieces and place on a parchment lined baking sheet.
Bake in the preheated oven for 25 minutes. Remove from oven and allow to cool completely.
Why haven't I thought of making them into bites? What a great idea ! I go for the large clusters right away anyway, it's my favorite part !
