Smoked Salmon Frittata

An elevated brunch favorite, this Smoked Salmon Frittata combines the rich flavors of smoked salmon with creamy goat cheese and fresh dill, perfect for any meal.

Ingredients

1 small onion, diced
2 cloves garlic, minced
1 tablespoon unsalted butter
6 extra-large eggs
1/2 cup heavy cream
2 ounces fresh goat cheese, crumbled
1/4 pound smoked salmon, chopped
1 scallion, chopped (white and light green parts only)
1 tablespoon chopped fresh dill
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tomato, finely diced

Instructions

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a pie plate and place it on a baking sheet; set aside.
In a 10-inch skillet over medium-low heat, sauté the diced onion, minced garlic, and butter until the onions are translucent, about 5 minutes.
Crack the eggs into a large mixing bowl and beat them until well combined.
To the beaten eggs, add heavy cream, crumbled goat cheese, chopped smoked salmon, chopped scallion, fresh dill, kosher salt, and freshly ground black pepper.
Stir the egg mixture well to ensure all the ingredients are evenly distributed.
Fold in the sautéed onion and garlic into the egg mixture.
Pour the frittata mixture into the prepared greased pie plate.
Bake in the preheated oven for about 50 minutes, or until the frittata puffs up and a knife insert into the center comes out clean.
Remove the frittata from the oven and let it cool slightly before garnishing with the diced tomatoes.
Cut the frittata into wedges and serve hot directly from the pan.

Notes

The frittata can be served alongside a green salad for a complete meal.
For a dairy-free version, omit the goat cheese and heavy cream, and substitute with dairy-free alternatives.
