Ingredients

1/2 inch piece of ginger, grated
1 clove garlic, minced
Pinch of crushed red pepper flakes
Dash of salt
1 red bell pepper, sliced
1/4 cup sugar snap peas
2 teaspoons sesame oil
3/4 cup shelled frozen edamame
1/4 cup pineapple juice
1 cup cooked brown rice
2 tablespoons chopped almonds for garnish

Instructions

Heat the sesame oil in a skillet over medium heat.
Add the grated ginger, minced garlic, crushed red pepper, and a dash of salt to the skillet; stir to combine.
Incorporate the sliced red bell pepper and sugar snap peas into the skillet with the ginger and garlic mixture.
Sauté the vegetables, stirring occasionally, until they start to soften and release their flavors.
Add the shelled frozen edamame to the skillet and increase the heat to high.
Pour the pineapple juice over the edamame and vegetables; cook for 8 minutes until the edamame is tender yet firm.
Stir in the cooked brown rice until it is fully integrated and heated through.
Remove from heat and transfer the Edamame Stir Fry to serving plates.
Garnish each plate with chopped almonds before serving.

Notes

Adjust the amount of crushed red pepper flakes to suit your spice preference.
You can include additional protein such as chicken, pork, beef, or shrimp to make this dish more substantial.
