Instant Pot Spaghetti Bolognese

Ingredients

1 tablespoon oil
1 large onion, finely diced
5 cloves garlic, minced
1 pound ground beef chuck
1 28ounce can whole peeled tomatoes, crushed or blended
2 carrots, finely chopped
1 celery stalk, finely chopped
1/4 cup tomato paste
1/4 cup dry red wine
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 tablespoon sugar
1 bay leaf
Kosher salt and fresh ground black pepper to taste
1 1/2 pounds meatballs (optional)
3/4 pound spaghetti or gluten-free spaghetti
Grated Parmesan cheese for serving

Instructions

Insert the Instant Pot liner and plug in the device.
Press the SAUTE button and wait for the Instant Pot to heat up.
Pour the oil into the Instant Pot, add the diced onion and minced garlic, and saute until translucent.
Add in the chopped carrots and celery, continuing to saute until all vegetables are softened.
Put the ground beef into the pot and cook until fully browned, making sure to break it apart with a utensil.
Stir in the tomato paste, wine, oregano, thyme, basil, Italian seasoning, sugar, and bay leaf, cooking for a few minutes until well mixed and fragrant.
If using meatballs, add them to the pot now and gently stir to combine them with the mixture.
Season the mixture with kosher salt and black pepper to your taste preference.
Cancel the SAUTE function by pressing the KEEP WARM/CANCEL button.
Close the Instant Pot lid, ensuring that the valve is set to SEALING.
Set the Instant Pot to MANUAL mode for 20 minutes at HIGH pressure.
After the cooking process finishes, let the Instant Pot naturally release pressure for 10 minutes, followed by a careful quick release using a wooden spoon to move the valve to VENTING.
While awaiting pressure release, cook the spaghetti according to package instructions in a separate pot, if not using the one-pot method mentioned below.
Open the Instant Pot lid once the pin drops, signaling the pressure has been fully released.
Serve a portion of cooked spaghetti with a generous amount of bolognese sauce, topped with freshly grated Parmesan cheese.
