In honor of Cinco de Mayo, this Arroz con Pollo is the perfect one pot dish & nice
change of pace from the usual Tex Mex fare. Comforting, flavorful and delicious – olé!
Instant Pot: Spinach Artichoke Hummus
Who knew the IP could put out some tasty appetizers?! The latest one I made was this Spinach & Artichoke Hummus. So good & a tasty variation to the traditional version!
Happy National Shrimp Day! To celebrate, I made Sweet & Sour Shrimp
in the IP, served over crunchy noodles!
Want to step up your IP game? Pressure Roasted Garlic Lemon CornishHens
were stuffed with lemon, rubbed with garlic, browned and pressure cooked
until golden. Comfort food, kicked up a notch with the help of my Instant Pot!
Bread in the IP?! Yes, by using the yogurt function to proof the dough! This
No Knead Parmesan & Herb bread loaf was ridiculously easy and amazingly flavorful!
Classic Caramel Cuban Flan! Desserts from the IP isn’t limited to only yogurt & cheesecake.
We loved this custard based dessert to satisfy our sweet tooth too!
Sorry Olive Garden, we’re eating in tonight! This Chicken Scampi has a nice punch
of garlic, a butter & white wine sauce and a melange of colorful bell peppers
that make it a great meal perfect for a weeknight or even for guests! Here’s the recipe I
made in the IP using only the SAUTE Mode – no pressure cooking required!
What’s better than plain mac & cheese? Cheesy Meaty Mac & Cheese that’s
studded with diced cheesy bratwurst! It’s a true one pot wonder in our house!
We devoured these homemade Vegetable Potstickers in which the dough and
filling were made from scratch! Once made, you could saute or pressure steam in the IP.
We partied like it’s Mardi Gras with this IP version of Chicken & Shrimp Jambalaya!
This uses the RICE and MANUAL setting to ensure fluffy, flavorful rice that’s studded with
shrimp, Andouille sausage and chicken. The dish is also naturally gluten free too!
After some trial & error, I made these Chicken Philly Cheesesteaks
which worked out best for us using only the SAUTE mode
(no pressure cooking required!). It was a delicious twist to the original beef version!
Instead of Chinese take out, we opted for Fake Out
with this Beef & Green Bean stir fry in the IP! The only thing
missing was the paper container to serve them in and there weren’t any leftovers!
Make fish fun with some Old Bay Fish Tacos! This version uses the
IP’s steam function and steams the fish to lock in all that flavor.
Just STUFF it! Well, pork chops, that is! I made a stuffing with blue cheese,
roasted red peppers & spinach for my pork chops. It came out deliciously
and the extra step of brining the chops made them super tender too!
Tamales got me like whoa! The IP did an awesome job pressure cooking my pork filling & steaming these Cilantro Pork Tamales in a fraction of the time. Have yourself a tamale party and stock up!
With summer around the corner, lighten up your meals with
some Thai Basil Chicken! It’s awesome over rice, a salad or
eaten nestled in lettuce cups for something guilt-free & flavorful!
It’s peak Alaskan salmon season, so get your salmon on! After spending some time in Alaska a few years ago to work on a culinary assignment, I fell more in love with salmon. This dish takes me back to the beauty of the Cordova, home of Alaska’s Copper River Salmon.
