Potatoes. We have an abundance of potatoes at our house, namely because my Irish husband loves potatoes as much as I love rice… so I try to incorporate potatoes into our meals throughout the week. Sometimes, potatoes are simply enough and can easily be a meal on it’s own. I’ve forgotten how much I love baked potatoes and stuffing or filling them up with whatever I have on hand. To make it easier, I’ve been making them in our Instant Pot Vortex air fryer (or any airfryer) because it comes out slightly crisp on the outside and creamy on the inside. Prep Time – 2 min
Cook Time – 45-50 min
Potatoes (Russets are best but any kind will do)
Olive oil or cooking spray
Salt & Pepper
Chives, finely chopped
Pico de Gallo
Cheddar Cheese, shredded or melted
Red onion, chopped
Green Onion, chopped
1. Scrub and dry your potatoes. Prick potatoes in several spots to allow proper cooking.
2. Add potatoes to a large bowl and coat well with olive oil or cooking spray
3. Sprinkle with salt & pepper
4. Place in Air Fryer basket and cook at 400 degrees for 30 minutes. Turn potatoes and cook for an additional 15-20 minutes or until form tender. Serve immediately with toppings of your choice.
