Green Cabbage and Potato Stew

A flavorful vegetarian stew that is nutritious and easy to make.

Ingredients

3 potatoes, peeled and diced into small cubes
1/2 head green cabbage, shredded
1 onion, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
2 tablespoons vegetable oil
4 cups vegetable broth
Salt and pepper to taste

Instructions

In a large pot, heat the oil over medium heat and sauté the onions, garlic, and potatoes until lightly browned.
Add the cabbage and herbs to the pot and cook for a few minutes.
Pour in the vegetable broth. Bring to a boil, reduce heat, and simmer for 30 minutes or until the potatoes are tender.
Season with salt and pepper to taste.
Serve hot, garnished with fresh herbs.

Notes

You can substitute the thyme and oregano with other herbs such as rosemary or marjoram.
Feel free to replace the cabbage with other leafy greens such as kale or collard greens.
