Vietnamese Mung Bean Dessert

A sweet and tasty mung bean dessert that is a popular treat in Vietnamese cuisine.

Ingredients

1 cup dried mung beans
1 cup banana, diced
1/2 cup coconut milk
1/3 cup sugar
2 tablespoons shaved fresh coconut, optional
1/4 teaspoon ground cardamom

Instructions

In a medium pot, boil the mung beans in 4 cups of water until tender, about 25 minutes.
Drain the mung beans. Return to the pot and add the banana, coconut milk, sugar, coconut, and cardamom.
Cook over medium heat for about 15 minutes, stirring frequently.
Transfer to individual dishes and serve warm or chilled.

Notes

This dessert can be served with additional coconut or sliced banana on top for garnish.
