Ingredients
1 (2-3 lb.) boneless pork loin roast
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons all-purpose flour
1/3 cup white wine
1 cup beef broth
1 tablespoon Worcestershire sauce
2 tablespoons Dijon mustard
2 teaspoons dried oregano
2 bay leaves
1 pound potatoes, cut into 1-inch cubes
2 carrots, cut into 1-inch slices
Instructions
Season pork loin with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add pork loin and cook until brown on all sides.
Transfer pork loin to crock pot.
Add chopped onion and garlic to the skillet and cook until softened.
Stir in the flour and cook for an additional minute.
Pour in the wine and simmer for 3 minutes, until liquid is reduced by half.
Whisk in the beef broth, Worcestershire sauce, Dijon mustard, oregano, and bay leaves.
Bring to a simmer and cook for 5 minutes, until liquid is reduced by half again.
Pour liquid over pork loin and add potatoes and carrots.
Cover and cook on low for 8-10 hours, or on high for 4-5 hours, or until pork reaches an internal temperature of 145F.
Discard the bay leaves and serve pork with vegetables and sauce.
