Cabbage Salad Mediterranean Recipe

A delicious vegan and paleo-friendly salad full of fresh and flavorful vegetables.

Ingredients

2 cups shredded cabbage
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/2 cup crumbled feta cheese
1/4 cup pitted olives, chopped
2 teaspoons extra-virgin olive oil
1 teaspoon fresh lemon juice
Salt and pepper, to taste

Instructions

In a large bowl, combine the cabbage, parsley, and mint. Sprinkle with feta cheese and olives.
In a small bowl, whisk together the olive oil and lemon juice. Pour over the salad and gently toss until everything is evenly coated.
Season with salt and pepper, to taste. Serve chilled.

Notes

You can replace the feta cheese with your favorite vegan cheese.
Add in some crunchy veggies like cucumber for extra texture.
