Cuban Empanada Recipe

A savory Cuban-style empanada made with a flaky crust and filled with flavorful ground beef and spices.

Ingredients

1 pound ground beef
1 tablespoon olive oil
1 onion, finely chopped
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground cumin
Salt and pepper to taste
1/4 cup cornstarch
1/4 cup water
2 tablespoons distilled white vinegar
2 tablespoons white sugar
2 tablespoons raisins
1 tablespoon capers
1/2 cup olives, chopped
2 tablespoons chopped fresh parsley
1 package refrigerated pie crusts (2 crusts)

Instructions

In a large skillet over medium-high heat, cook and stir the ground beef until no longer pink, about 5 minutes. Drain off excess grease.
Add the olive oil to the skillet and sauté the onion until tender and beginning to brown, about 5 minutes. Stir in the garlic, oregano, cumin, salt, and pepper, and cook until fragrant and combined, about 1 minute more.
In a small bowl, dissolve the cornstarch in the water. Add the cornstarch mixture to the skillet and stir in the vinegar, sugar, raisins, capers, olives and parsley. Simmer for about 5 minutes. Set aside and let it cool completely.
Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out each pie crust to about 1/8 inch. Cut each crust into 4 equal-sized circles. Divide the beef mixture evenly between the circles of dough. Fold the dough in half and press the edges together firmly to seal.
Place the empanadas on the prepared baking sheet. Bake in the preheated oven until the crusts are golden brown, about 20 minutes.

Notes

If you would like to make it a little spicier, feel free to add a pinch of red pepper flakes.
If you do not have refrigerated pie crusts available, you can make your own pastry dough or use ready-made frozen pastry shells.
