Cuban Style Arroz con Pollo

This is a flavorful and authentic Cuban dish with a delicious combination of chicken, vegetables, spices and rice.

2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
34 skinless and boneless chicken breasts, cut into small cubes
3 bell peppers, cut into thin strips
2 large tomatoes, chopped
1 teaspoon oregano
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
salt to taste
3 cups chicken broth
2 cups long grain white rice, rinsed
1/3 cup green olives, chopped


Heat olive oil in large pot over medium heat. Add onion and garlic and sauté for about 3 minutes.
Add chicken pieces, bell peppers, tomatoes, oregano, cumin, black pepper, red pepper flakes, salt and stir to combine.
Cook until chicken is not pink anymore and vegetables are tender, about 10-15 minutes.
Add chicken broth and bring to a boil. Stir in rice, reduce heat to low, cover and simmer for about 20 minutes until liquid is absorbed and rice is cooked.
Stir in olives and cook for a few more minutes. Serve warm.


For extra flavor, add 1 teaspoon of smoked paprika to the mixture.
You can also substitute the bell peppers with any other preferred vegetables.
