Pan Fried Icelandic Cod with Mushrooms and Herbs

This Pan Fried Icelandic Cod with Mushrooms and Herbs is a delicious, simple, and super flavorful dish that goes well with different types of sides.

Ingredients

2 cod fillets, skin detached and cut into desired pieces
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon finely chopped garlic
1 tablespoon finely chopped fresh herbs (e.g. parsley, thyme, rosemary, oregano, chives)
Salt and freshly ground pepper, to taste
1 shallot, thinly sliced
2 cups sliced mushrooms
1/4 cup white wine or chicken broth
1/4 cup chopped fresh parsley leaves (optional)

Instructions

Heat a large skillet over medium-high heat. Add the olive oil and butter.
When hot, add the garlic and herbs and season with salt and pepper. Cook until fragrant, about 1 minute.
Add the shallot and cook for another minute, until softened.
Add the mushrooms and cook for 3 minutes, stirring occasionally.
Add the cod and cook for about 3 minutes, flipping once to evenly cook each side. Add the wine or broth and let it simmer for a few minutes.
Garnish with parsley (optional) and serve immediately.

Notes

You can use other types of white fish such as haddock or Pollock in this recipe.
Serve with mashed potatoes or steamed vegetables for a complete meal.
