Filipino Chicken Caldereta (Caldereta Manok)

Tender and flavorful chicken stew, with a hint of sweetness that is perfect for any occasion.

500g chicken, cut into pieces
2 onions, finely chopped
3 tomatoes, diced
1/4 cup liver spread
2 tablespoons garlic, crushed
2 tablespoons tomato paste
1/2 teaspoon cumin powder
1/2 teaspoon oregano powder
1/2 teaspoon paprika
1/2 teaspoon Worcestershire sauce
Salt and pepper to taste
2 tablespoons cooking oil
1/2 cup green olives
1 cup raisins


In a large bowl, marinate the chicken with salt, pepper, Worcestershire sauce, and a pinch of cumin, oregano, and paprika. Let it sit for at least 30 minutes.
Heat oil in a large pot over medium heat. Add chopped onions and garlic. Cook until golden brown.
Add the marinated chicken and cook until it changes color.
Add tomato paste and cook for a few minutes until the oil starts to separate from the mixture.
Pour in the diced tomatoes and the liver spread and cook until the oil separates again.
Add enough water to cover the chicken. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the chicken is cooked through.
Add the raisins and green olives. Mix until evenly combined and cook for an additional 10 minutes.
Serve hot with boiled white rice or mashed potatoes and a side dish, such as a simple green salad.


You can also add potatoes or sliced carrots to the stew, if desired.
For added flavor, you can also add a tablespoon of liver spread to the cooking broth.
