Red Robin Fish and Chips

This homemade fish and chip recipe will fulfill the classic British tradition for a classic and tasty dish.

Ingredients

1.52 lbs cod or haddock, cut into large strips
1 cup flour
2 tablespoons baking powder
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 1/4 cup beer (preferably an ale)
Oil, for deep frying
1 cup water
3 cups flour
2 tablespoons baking powder
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried thyme
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 cup cold butter, cut into small cubes

Instructions

1. In a medium bowl, combine 1 cup flour, baking powder, salt, garlic powder, thyme, black pepper and paprika. Stir in beer and mix until it forms a thick batter.
2. Heat oil in a deep fryer or large pot to 375°F. Dip fish pieces into the batter one at a time and add to the hot oil. Fry until golden brown, about 8 minutes. Remove from the oil with a slotted spoon and drain on a paper towel lined plate.
3. For the chips, add the water, 3 cups flour, baking powder, salt, garlic powder, thyme, black pepper and paprika to a large bowl and mix until well combined. Use your hands to form a dough ball, then roll out the dough to about 1/4-inch thickness.
4. Heat oil in the deep fryer or large pot to 375°F. Cut the dough into thin strips and add to the hot oil. Fry until golden brown, about 10 minutes. Remove from the oil with a slotted spoon and drain on a paper towel lined plate.
5. Serve the chips and fish with tartar sauce, malt vinegar, and lemon wedges. Enjoy!

Notes

If the batter is too thick, thin it out with some more beer or a bit of water.
Feel free to use other fish such as halibut or bass for this recipe.
