2 green plantains
1 cup vegetable oil for frying
Salt to taste
Optional: mojo sauce for dipping (garlic, olive oil, and citrus juice)
Peel the plantains by cutting off both ends and making a slit along the side of the plantain with your knife. Use your fingers to pry off the skin in sections.
Cut the peeled plantains into 1-inch thick slices.
Heat the vegetable oil in a large frying pan over medium-high heat.
Once the oil is hot, place the plantain slices in the oil and fry them for about 3 minutes or until they are lightly golden on both sides.
Remove the plantains from the oil with a slotted spoon and drain on paper towels to remove excess oil.
Using a tostonera (plantain press) or the bottom of a glass, press down on each fried plantain slice to flatten it to about half its original thickness.
Raise the temperature of the oil to high heat.
Fry the flattened plantains again in the hot oil for another 2-3 minutes or until they are crisp and golden brown on both sides.
Remove the tostones from the oil with a slotted spoon, drain on fresh paper towels, and while still hot, sprinkle with salt to taste.
Serve immediately, on their own or with optional mojo sauce for dipping.
Make sure the plantains are green and not ripe to ensure the tostones will be crispy.
If a tostonera is not available, any flat, heavy object can be used to flatten the plantains.
