Pan-Seared Speckled Trout

A simple and delicious pan-seared speckled trout recipe for a light and savory meal.

4 speckled trout fillets, skin-on
2 tablespoons olive oil
1 tablespoon unsalted butter
1 lemon, zest and juice
2 garlic cloves, minced
1 teaspoon dried thyme
Salt to taste
Black pepper to taste
Fresh parsley, chopped for garnish


Rinse the trout fillets and pat them dry with paper towels.
Season both sides of the fillets with salt, black pepper, and dried thyme.
Heat the olive oil and butter in a large, non-stick skillet over medium-high heat until the butter is melted and starting to bubble.
Carefully place the trout fillets skin side down in the skillet and cook for about 3 to 4 minutes, until the skin is crispy.
Flip the trout fillets and add the minced garlic to the pan. Cook for another 3 minutes, or until the flesh is firm and flaky.
Remove the pan from the heat and grate the lemon zest directly over the cooked trout. Squeeze the lemon juice over the fillets.
Transfer the trout to serving plates and garnish with fresh parsley.
Serve immediately with your choice of side dishes, such as steamed vegetables or a light salad.


Be careful not to overcook the trout as it can dry out quickly.
If you prefer, the lemon juice can be mixed with the melted butter and garlic before being poured over the fillets.
