Mediterranean Stuffed Bell Peppers

Colorful bell peppers stuffed with a tasty mixture of feta cheese, olives, and herbs, turning them into a delightful Mediterranean appetizer.

4 large bell peppers, assorted colors
1 cup feta cheese, crumbled
1/2 cup Kalamata olives, pitted and chopped
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
Salt and pepper to taste


Preheat your oven to 400°F (200°C).
Wash the bell peppers and cut them in half from stem to base. Remove the seeds and membranes.
In a bowl, combine the crumbled feta cheese, chopped olives, dried oregano, dried thyme, garlic powder, and fresh parsley.
Drizzle in the olive oil and lemon juice, then mix well until all the ingredients are evenly incorporated.
Taste the filling and season with salt and pepper as desired. Mix again to distribute the seasonings.
Stuff each bell pepper half with the feta and olive mixture, pressing it in firmly to ensure the peppers are well-filled.
Place the stuffed bell peppers on a baking sheet lined with parchment paper.
Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the filling is slightly golden on the top.
Remove from the oven and allow to cool for a few minutes before serving.


You can add chopped sundried tomatoes for an extra Mediterranean flavor.
These stuffed peppers can be served warm or at room temperature.
