Filipino Beef Tapa

Savory and slightly tangy beef tapa, a Filipino breakfast favorite traditionally served with garlic fried rice and a sunny-side up egg.

Ingredients

1 kg beef sirloin or tenderloin, thinly sliced
1/2 cup soy sauce
1/4 cup vinegar
1 head of garlic, minced
3 tablespoons sugar
1 teaspoon salt
1 teaspoon ground black pepper
Cooking oil for frying

Instructions

Combine soy sauce, vinegar, minced garlic, sugar, salt, and black pepper in a bowl to create the marinade.
Place the beef slices in the marinade, ensuring each piece is well coated.
Cover the bowl with plastic wrap and refrigerate the beef to marinate overnight or at least 3 hours.
Once marinated, remove the beef slices from the refrigerator and let them come to room temperature.
Heat cooking oil in a pan over medium-high heat.
Fry the marinated beef slices in batches, cooking each side for about 2 to 3 minutes until browned and slightly charred.
Once cooked, transfer the beef tapa onto a serving plate.
Serve the beef tapa with garlic fried rice and a sunny-side up egg for the classic tapsilog experience.

Notes

Adjust the amount of sugar based on your preference for a sweeter or less sweet tapa.
For a spicier version, add chili flakes to the marinade.
Leftover tapa can be stored in the freezer and reheated in a pan for best results.
