Mashed Potato Pancakes Recipe

Mashed potatoes are a favorite snack of many people because they are flavorful. The warm dish also allows you to fill your stomach easily. That is why you will love mashed potato pancakes.

  • Total Time: 40 minutes


  • Mashed potatoes – 2 cups
  • Egg – 1
  • All-purpose flour – 1/3 cup
  • Minced chives – 2 tbsps
  • Shredded cheddar cheese – 1 cup
  • Kosher salt – ½ tsp
  • Black pepper – ¼ tsp
  • Oil – ½ cup
  • Sour cream


  1. Prepare mashed potato at home or use leftovers from your previous meal if any.
  2. Add the mashed potato to a large bowl and then add the large egg to it.
  3. Measure the flour and add it to the same bowl.
  4. Place chives in the bowl, then cheddar cheese.
  5. Season the ingredients using salt and pepper.
  6. Mix all the ingredients with a plastic or wooden spatula.
  7. Take a large pan, pour oil in it, and heat it on the stove until it reaches a temperature of 325°F.
  8. Form pancakes using the ¼ cup potato mixture for each disc while the pan heats.
  9. One disc should be at least 0.5 inches thick.
  10. Once the oil has heated, transfer the pancakes using a spatula to the pan.
  11. Fry one side for a few minutes until it turns golden brown, then flip the pieces to cook the other side.
  12. Line a large plate with a paper towel while the pancake fry.
  13. Transfer the cooked pancakes to the line plate to soak the oil. You may serve the pieces with a dollop of sour cream to enhance the taste.
