Chicago Style Pizza is not your traditional pizza, but more like a pie. It starts out with a simple, thin layer of dough that’s laid into a deep round pan and pulled up the sides, then parbaked before the toppings are added. The crust is then lined with meats and/or vegetables such as Italian sausage (a Chicago staple), onions and bell peppers, usually under mozzarella cheese. Some restaurants lay on the sausage so thickly that it covers the whole surface of the pizza, like a giant sausage disk (amazing, huh?!). Then a layer of seasoned crushed tomatoes goes on top of it all and the pizza is baked to perfection.
The delicious end result is a deep-dish pizza which is often eaten with a knife and fork, since its thick gooeyness makes it messy to eat with your bare hands. The exception is when it’s eaten cold the next day for breakfast (the way I prefer!).
Tonight we enjoyed dinner out with some friends at My Pie Pizzeria (Clark/Fullerton). Its our fave place for pizza and their really fresh soup & salad bar. The best part? We took advantage of the nightly special for all-you-can-eat soup/salad bar and pizza for less than $10. ::thumbs-up!::
