Betsy’s Bacon, Spinach & Cheese Quiche

A delicious quiche made with bacon, spinach, and Swiss cheese.

Units Scale

23 cups sliced onions
2 tablespoons olive oil
Salt, pepper and sage, to taste
Prebaked 9-inch pie shell
1/4 cup coarsely grated Swiss cheese
3 large eggs
1 1/2 cup whole or 2% milk
10-ounce package of fine fresh spinach
2 tablespoons shallots or scallions
2 tablespoons butter
1/4 cup cooked bacon
Nutmeg, to taste


Cook the sliced onions in 2 tablespoons olive oil until very tender and season with salt, pepper, and a little sage.
Preheat the oven to 375 degrees Fahrenheit. Place rack in the upper-third level.
Spread half the cheese in the bottom of the prepared pie shell.
Spread onions over the cheese.
Stem, wash, blanch, squeeze dry, chop, and sauté the spinach in 2 tablespoons butter with 2 tablespoons shallots or scallions for several minutes until very tender. Season with salt, pepper, and a speck of nutmeg.
Spread the spinach over onions.
Top with remaining cheese and cooked bacon.
Beat eggs and milk together and pour it into the pie shell, filling to within 1/8 inch of the rim or no more than halfway if the shell is slant-sided.
Bake 25 to 30 minutes, until the filling is lightly puffed and browned.
Serve warm.
