Blueberry Spinach Salad

A delicious, healthy salad bursting with blueberries, spinach, and pecans, perfect for lunch or as a side dish.

Ingredients

2 teaspoons honey mustard
1 teaspoon sugar

1 (10 ounce) package fresh spinach, torn
1 (4 ounce) package blue cheese, crumbled
1 cup fresh blueberries
1/2 cup chopped pecans, toasted

Instructions

In a bowl, whisk together the olive oil, white wine vinegar, raspberry puree, honey mustard, sugar, and salt until well blended.
In a large salad bowl, toss together the spinach, blue cheese, blueberries, and pecans.
Pour the dressing over the salad and toss gently. Serve immediately.
