Cajun Caviar

A delicious and easy-to-make appetizer – Cajun Caviar prepared with black eyed peas, bell peppers, green onion, garlic, jalapeno peppers, cumin, cilantro, wine vinegar and olive oil.

Ingredients

1 (10 1/2 ounce) can black eyed peas, drained
1/2 cup bell pepper, chopped
1/2 cup green onion, chopped
1 garlic clove, minced
1/3 cup pickled jalapeno peppers, chopped
1 teaspoon cumin
2 tablespoons fresh cilantro, chopped
1 tablespoon wine vinegar
2 tablespoons olive oil

Instructions

In a mixing bowl, combine all the ingredients and mix well.
Cover and refrigerate the mixture for at least two hours, or overnight.
Chill the mixture just before serving.
Serve Cajun Caviar with tortilla chips, corn chips or crackers.
