Spinach Quiche

This delicious spinach quiche is packed with spinach, garlic, onions, mushrooms, feta, and cheddar cheese and is the perfect meal for any day of the week!

1 9-inch deep dish pastry shell
3 tablespoons butter
1 clove garlic, minced
1/2 onion, chopped
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup sliced fresh mushrooms
1/4 cup crumbled feta cheese
1/2 cup shredded Cheddar cheese, divided
salt and pepper to taste
4 eggs
1 1/2 cups milk


Preheat oven to 375 degrees F (190 degrees C).
Melt butter in a medium skillet over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.
Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.


Make sure spinach is well-drained before adding to mixture, to avoid a watery quiche.
Substitute another cheese for feta, if desired, such as Gruyere, blue cheese, or goat cheese.
