Southwestern Pork Carnitas Filling

A flavorful and tender pork carnitas filling, perfect for making tamales.

Ingredients

35 lbs pork butt or shoulder
1/2 cup southwest seasoning
24 tablespoons canola oil

Instructions

Preheat the oven to 350 degrees Fahrenheit.
Place the pork in a dutch oven and coat with the southwest seasoning until completely covered.
Drizzle the canola oil over the pork.
Cover the dutch oven and bake in the preheated oven for 1.5 to 2 hours, until completely cooked.
Allow to cool on a large cutting board.
When cooled, shred or chop up the pork into bite-sized pieces.
Place in a bowl, cover and chill until ready to fill tamales.

Notes

For extra spice, increase the southwest seasoning to 3/4 cup or more, according to taste.
