Peppermint Brownie Rounds

These vegan Peppermint Brownie Rounds are the perfect indulgent treat for the holidays. A fudgy brownie round topped with a creamy peppermint buttercream frosting and crushed peppermint candies.

Units Scale

1 box dry cake mix
1/2 cup oil
3 eggs
1 teaspoon vanilla extract
1/2 cup butter, softened
2 teaspoons peppermint extract
Splash of half & half or cream
3 cups powdered sugar
Crushed peppermint candies (for garnish)


Heat oven to 350 degrees F.
In a large bowl, stir together dry cake mix, oil, eggs and vanilla, using a spoon, until dough forms.
Shape dough into 1 inch balls. On an ungreased cookie sheet, place balls about 2 inches apart.
Bake 10 to 12 minutes or until set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
In a stand mixer, cream butter. Add peppermint extract and alternate adding a splash of half & half and a cup of powdered sugar until desired consistency is achieved (ideally a “stiff” frosting).
Frost the cooled cookies with the peppermint buttercream frosting and sprinkle with crushed peppermint candies.


Add more powdered sugar or cream if needed to reach desired consistency.
