Grilled Korean-Style Steaks with Spicy Cilantro Sauce

Ingredients

3/4 cup plus 3 tablespoons soy sauce
1/4 cup medium-dry sherry
3 tablespoons sugar
1 1/2 tablespoons plus 1 1/2 teaspoons minced garlic
1 tablespoon plus 1/2 teaspoon Asian sesame oil
1 teaspoon dried hot red pepper flakes
6 (1-inch-thick) boneless beef top loin (strip) steaks, about 3/4 pound each
3/4 cup chopped fresh cilantro (including roots and stems)
1/3 cup vegetable oil
1 tablespoon fresh lime juice
1/2 teaspoon minced seeded fresh habanero or serrano chile (optional)
1 (4-inch-long) fresh hot red chile, chopped (optional)

Instructions

In a baking dish (13 by 9 by 2 inches), mix 3/4 cup soy sauce, sherry, sugar, 1 1/2 tablespoons minced garlic, 1 tablespoon sesame oil, and red pepper flakes until the sugar is dissolved.
Place steaks in the marinade, ensuring each one is well coated. Turn the steaks once during the marinating process.
Allow steaks to marinate for 1 hour, turning once halfway through.
Prepare the spicy cilantro sauce by combining chopped cilantro, vegetable oil, lime juice, the remaining 3 tablespoons of soy sauce, the remaining 1 1/2 teaspoons of minced garlic, the remaining 1/2 teaspoon of sesame oil, and chile if using.
Preheat the grill to high heat.
Once the grill is hot, place marinated steaks onto the grill.
Grill steaks for 3 to 4 minutes per side, achieving a medium-rare doneness.
Transfer the grilled steaks to a cutting board and let them rest for 5 minutes.
After resting, slice the steaks crosswise into 3/4-inch-thick slices.
Serve the steak slices topped with a portion of the cilantro sauce.
Offer extra sauce on the side for guests to add to their liking.

Notes

For less heat, omit the habanero or serrano chile from the sauce.
The steak’s grilling time may need to be adjusted based on the desired level of doneness.
