Huevos con Pilco de Choclo

Ingredients

1 tablespoon butter, plus extra for greasing
11/2 cups whole milk or half-and-half
4 to 8 eggs (1 or 2 per person)
3 tablespoons finely chopped onion
Salt and freshly ground black pepper to taste
2 tablespoons butter
4 cups fresh or frozen corn kernels
1 tablespoon finely minced fresh basil

Instructions

Preheat the oven to 400°F (205°C).
Butter 4 individual earthenware dishes or 1 large one, and set aside.
Melt 2 tablespoons butter in a medium saucepan over low heat.
Add the chopped onion to the saucepan and sauté until softened but not browned, about 4 minutes.
Stir in the corn kernels and milk or half-and-half, then bring to a boil.
Reduce heat to maintain a simmer, cooking uncovered while stirring occasionally until corn is tender and most liquid is absorbed, about 10 to 15 minutes.
Season the corn mixture with salt, black pepper, and minced basil, then remove from heat.
If preparing in advance, the corn mixture can be reheated with additional milk before proceeding.
Divide the corn mixture among the prepared dishes, making an indentation in the center of each for the eggs.
Crack the eggs into a separate bowl, one or two at a time, and then slide them into the indentations in the corn mixture.
Season the eggs with additional salt and black pepper, and place a small dot of butter on top of each one.
Place the dishes in the preheated oven and bake for 7 to 10 minutes, until egg whites are set but yolks remain soft.
Serve the Huevos con Pilco de Choclo hot from the oven.

Notes

If using frozen corn, it may take longer to cook as it releases more water.
For an additional touch of flavor, you can sprinkle extra minced basil over the finished dish before serving.
