Cod with Leeks & Tomatoes

Delight in the delicate flavors of baked cod served on a bed of lemony leeks and cherry tomatoes.

Ingredients

2 medium leeks, white and light-green parts only, thinly sliced, rinsed well, and patted dry
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 teaspoon freshly grated lemon zest
3 sprigs thyme, or 1 teaspoon dried thyme
Salt and fresh ground pepper
2 1/2 cups cherry tomatoes, (about 12 ounces)
4 cod fillets, each 6 to 8 ounces and 3/4 to 1 inch thick

Instructions

Start by preheating your oven to 450 degrees Fahrenheit.
Take a 9-by-13-inch baking dish and combine the leeks, lemon juice, olive oil, lemon zest, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Cover the dish with foil and bake in the preheated oven until the leeks become slightly tender, which should take approximately 8 to 10 minutes.
Once the leeks are softened, remove the dish from the oven and add the cherry tomatoes to it, tossing everything together to mix well.
Take each cod fillet and season both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper, then place the seasoned fillets on top of the leeks and tomatoes in the baking dish.
Re-cover the dish with foil and return it to the oven, baking until the cod is opaque throughout, which will usually be in 15 to 20 minutes.
When the fish is cooked through, remove the dish from the oven and serve the baked cod with vegetables immediately.

Notes

Pair this dish with a side of Lemony Dill Rice for a complete meal.
Be sure to check the cod for doneness by seeing if it flakes easily with a fork.
